An Ode to Yoga Pants

Do you ever have those days when you just don’t want to go to work? When you can’t get out of bed and you snooze your alarm for 30 minutes, until you finally have to jump up and throw something on to make it on time? Well that was me today. But lucky for me, I work at a ski resort, where there isn’t a dress code. Yes, there is a slight dress code depending on what department you work in. But lucky for me, I have a great boss and co-workers, and a hidden desk job where no customers have to see me. Which means – no dress code! This gives me the freedom on days like today, when I couldn’t get out of bed until 20 minutes before I was supposed to be at work, to throw on yoga pants. YOGA PANTS!! In any normal corporate job, this would NOT be okay. But somehow I have found the only job that utilizes my college business degree skills, while still giving me the freedom to dress how I would like. So fine, I might not make as much as an investment banker in NYC, but at least I get to be comfy while compiling my reports. (Today I literally sat in a 4 hour long meeting, wearing a tshirt, fleece, yoga pants, and socks. No shoes. Just socks. Because how I am going to sit cross-legged in my chair if i have shoes on? It’s not possible. And who likes to be uncomfortable in a 4 hour long meeting?? Not me!) No heels required, no suits required, no makeup required. Let’s be real – not even shoes are technically required. When I sit back and think about my options, I realize I actually have it pretty good.

So today this post is dedicated to yoga pants. May you continue to be part of my dress code. And may others one day get to wear you as part of theirs.

Mani Monday!

Here in the mountains, it is STILL snowing!! No spring in sight 😦 So I decided to choose my nail colors based on my mood. I chose Essie’s new spring color “Bikini So Teeny” as my hope for spring, and one of Essie’s darker colors, “Wicked”, as my nod to the snow still being here. I love adding a little detail on my ring finger. I did white dots, let that dry, then tiny “Bikini So Teeny” dots on top of the white.

I’ve slowly increased my routine for painting my nails over the years, and now it is a whole process. Here are the basics:

Top Left: Nail Polish Remover – I love Sephora brand nail polish remover. It works the best of any i’ve found. This one is Formula X.

Bottom Left: Essie “Apricot Cuticle Oil” nail polish. I put this on after the nail polish remover. I paint it on my cuticles around my nails and then rub it in. It is the best moisturizer, especially for my dry mountain hands. (The cold weather is rough on them!)

Top Right: Essie “Grow Stronger” nail polish. I put this on after the cuticle oil. Since I do my nails a lot, I recently adopted this step. I have noticed a big difference in my nails since using it. It keeps them healthy, and gives a good shine. If you don’t want to do actual color, this is a good go-to. It helps nourish your nails, and makes them shiny. The perfect combination.

Mid-day Snack?

I have found the BEST midday snack! It’s called Snapea Crisps, and they are fabulous!! Here’s a picture(look for these in your local grocery store!):

I found these at the grocery store the other day and thought I would give them a try. I picked the “Lightly Salted” flavor, but there were a few choices if salty isn’t your style. And obviously if you don’t like sugar snap peas, you might not like these…What I liked is that the whole bag is about 300 calories. THE WHOLE BAG! If you have binge eating problems like me, this is a good find. For someone who could go through a bag of chips in 5 seconds, this is a much better go-to when a craving hits. Hopefully you don’t eat the whole bag in one sitting, but if you did..it wouldn’t be the worst! Each serving is 13% of your daily fiber for the day, not too shabby!

GAME OF THRONES!!!

I will not be doing any posts tonight because I am devoting all my time to watching the new episode of GAME OF THRONES!!!!!! #SeasonFour #LetTheGamesBegin! I really hope HBO GO doesn’t crash tonight like it did on the True Detective Finale night… fingers crossed!

Fab Find!

Last fall I was vacationing in the Hampton’s (legit, I know), and found the most fabulous shirt at Lilly Pulitzer. It was dark pink and had gold buttons and I just loved it. I bought it on the spot, and wore it with jeans and riding boots in the fall. It was flowy, breezy, and perfect. Well…Lilly’s newest release of spring clothes has unleashed a surprise too good to be true — my favorite shirt, but in summer colors!!!

I was SO excited. It’s definitely a must have. Not only does it incorporate my favorite things (bright colors, flowing fabric), but it is the perfect go to for spring AND summer! You can pair it with dark jeans if it’s a colder spring day, and then transition it to summer with white jeans (as the pic shows), or wear it with white shorts and a cute bedazzled sandal. The options are endless!! Throw on some gold bangles rocked with a perfect tan, and you are good to go!

Leftover Status

So remember when I made paninis and said you could use the turkey bacon for something else? Well the time has come. I was super lazy tonight and didn’t want to spend much money, so I decided to use what I had around the kitchen. What did I have to work with from my panini day?? Turkey bacon and cracked pepper deli turkey. Hmm, sounds odd right. Wrong! I turned it into a delicious pasta. Here’s how:

First – ingredients:

Farafelle Pasta – I use the grocery store brand. It’s super cheap, and does the trick. I think it was literally 98 cents. You can use any pasta you like. Bow tie just happens to be my favorite.

Alfredo Sauce – Your favorite type. I love this CLASSICO brand. Tonight I picked “Light Asiago Romano Alfredo” flavor, but any alfredo will do. I’m all about easy dinners because let’s be real, no one wants to cook after they have been working all day. #ick

Turkey Bacon – This is from the panini night. For this pasta, you need about 6 pieces (so still some to spare for breakfast!).

Deli Turkey – I had cracked pepper turkey from the panini night. There was about a 1/3 pound left of the pound I originally bought. Perfect amount.

Optional – Parmesean cheese or mozzarella cheese…your call!

DIRECTIONS:

Start your water boiling for your pasta. Fill your pot about 3/4 of the way full and salt your water. Put on high heat to bring to boil.

Start cooking your turkey bacon. Put a sauté pan on medium high heat and place 4 pieces of bacon in the pan (or as many will fit).

Once your water comes to a boil, pour in about half a box of pasta.

Your bacon should take about 7-10 minutes to cook. Once cooked, place on a paper towel to get any access grease off. **Turkey bacon is actually a lot less greasy then real bacon, which is a definite plus. I mean really, who likes grease?? Not me.**

While the pasta is cooking, cut the deli turkey into bite size pieces. Do the same with the bacon once it has cooled.

Once the pasta is done cooking, drain it and return it to it’s original cooking pot.

Pour the alfredo sauce on the pasta and stir to distribute. Then add in deli turkey and turkey bacon. Sprinkle some parmesan or mozzarella cheese on top (if desired). and BOOM! You’ve got dinner!! Like how easy was that?? Genius. AND you don’t even have to add salt or pepper, because the bacon is salty enough, and the cracked pepper deli turkey adds enough pepper to void out seasoning. It is literally one of the easiest things to make.

So I am officially obsessed with this necklace.

I saw it on Instagram, and I immediately loved it. I’m pretty sure someone needs to give me this as a present asap! It’s so perfect and demure, you could wear it with everything. It’s one of those necklaces that you never have to take off because you can add accessories or take them away, but the gold heart always remains. Hmm, maybe I should suggest this to my boyfriend as a 2nd year anniversary present haha! I’m also envisioning it as the 20-something year old’s new answer to the friendship necklace. Since we graduated from Claires years ago, it’s only fitting that we need a new friendship necklace situation. Time to UPGRADE! And this necklace seems to be the perfect choice. This necklace is from Ruby Stella, a company I have only recently heard of, but will continue to keep an eye on. Especially since they make heart necklaces…I mean really, who doesn’t love a heart…

Foodie Friday!

Welcome to my delectable dinner from last night, a PANINI!!  Paninis are super easy to make, and SO delicious!! My boyfriend is a pro at making these, so we eat them often. (I can make them as well, but it always seems better when he makes them haha) Paninis are a great go-to when you have no ideas on what to make for dinner. This particular panini is a turkey, bacon, avocado panini- my fav! All you need is the following:

1/2 a pound of turkey breast (fresh from the deli! I love the cracked pepper turkey or cajun turkey)

1 avacado (each panini gets half an avocado)

A pack of turkey bacon (Slightly healthier. You only need two pieces for your panini, so the rest can be used for breakfast or for a yummy pasta for dinner later in the week.)

Cheese – I branched out and tried a new type of cheese I saw at the grocery store. It was called “White Cheddar Chipotle”. It was pretty good. Any cheese will do. My favorites are pepper jack, provolone, or mozzarella. Pick whichever cheese is your favorite. I usually put two pieces on my panini for optimal cheesiness.

Bread – I used whole wheat bread because that is my go-to bread, but whatever is your favorite will work great.

Condiments – I’m not a big condiments person, but the sandwich just needs a little something so it’s not too dry. I put the slightest amount of low fat mayonnaise possible on my sandwich. My boyfriend puts mayo and mustard on his. It’s your call.

Now comes the fun part. First, preheat your panini maker. To make the panini, the first step is to cook the bacon so it is ready to go. Place the bacon in a small pan and cook for about 4-5 minutes depending on the temperature of the your stove. You will know when it’s done. Then put all the pieces together. On one side of the bread, spread a small amount of olive oil for the perfect crispiness in the panini maker. Place the bottom piece of bread (olive oil side down) on the panini grill. Next, place the condiments, then the cheese, then the turkey, then bacon then avocado. You can really layer these any way you want. Finish with the top piece of bread, with the olive oil side up. Close the panini maker and let the magic happen! It usually takes about 4 to 5 minutes for a perfectly melted panini.

Reality Roundup

So now that I have a plan…let’s get this going!

This week on reality tv was hardcore. I feel like I’ve watched so many shows, I don’t even remember what happened two days ago!

RHBH Reunion Part 3 – This was wack. I love the Beverly Hills housewives, but the reunion made me a little iffy on Lisa. She has always been my favorite, however the Lisa-Brandi situation is upsetting and hard to understand. And I definitely think that Lisa should apologize, she does seem to have a problem with that as Brandi and Kyle have said. Long story short, I hope better things happen next season!

Southern Charm – The redhead is pregnant with the coke-head senator’s baby?! No wait, false alarm! Okay, now they are dating?? Then she got on the Chuck Bass guy?? Now the senator and Chuck Bass are fighting because of the redhead’s stories? It seems like she lies a lot.. and is just trying to cause drama. This show is almost too dramatic for me to watch, but obviously I secretly love it because I’ve tuned in 3 weeks in a row. Survey says I can’t wait for next week when the cute prepster guy calls the redhead out on banging 3 dudes in two weeks…OH SNAAPPPP!

Total Divas – I don’t really have any comments on this show, because it’s all very predictable. I watch it because I like the one Bella twin and John Cena’s relationship……but in reality, there’s really not much to say. Diva wrestlers get in girly drama, slap each other, fight a little, and then go cuddle with their “man” (as they always love to say). The end. Get ready for the same story next week.

Eric and Jessie: Game On – I LOVE LOVE LOVE this show. They are so cute, and so hot. Like I feel like I have a gurl crush on Jessie. She’s gorg! I can’t even pay attention to the plot because they are both so good-looking! I mean what happened this week? Who knows..something about Jessie being pregnant. Who cares- they are hot.

RHOA – Bitches be cray, as always. And apparently the husbands are cray as well.  That is all.

RHNY – The New York housewives have never been my ultimate favzies (I’m more of an OC, NJ and BH girl), but I do love to watch them. Ramona and Sonja are just so ridiculous, its great. And I love how the Countess made an appearance this week. She just tries to be so proper, it’s laughable. It’s like just be yourself geez. I like the new girl, she’s funny and seems pretty normal. Aviva is just wack, I can’t take her. I’m definitely pro-Carol on this one. BookGate has gotten blown out of the control.

Chrisley Knows Best – I stumbled across this show with my sister, and knew immediately that it was reality gold. It’s funny, but in a completely cheesy way. I’m like, is this really your life?? The dad is so controlling, I can’t believe they all go with it. But it definitely makes for some laughs, so I’ll approve.

Guiliana and Bill – SO glad they are back! And on E! This is big. It makes me happy that they are so successful, and Baby Duke looks JUST like Bill. Soooo cute! I hope they are secretly having a surrogate baby RIGHT now and are going to announce that they are like 7 months along or something crazy. #FingersCrossed

There are a lot of other reality shows, but as you can see from this post, my go-to channel is Bravo with a side of E!.
